The history of peri peri sauce might originate in Portugal but being a South Africa when I think peri peri I think Mozambique. I think Africa, I think hot and I think chicken.
I’m on a journey of exploring how to make food ‘from scratch’. Going out to buy a peri peri sauce, although there are plenty of good ones in South Africa, is out of the question. Especially since I have chili trees growing out on my balcony. So home-made, hand-made it is.
I didn’t look up a recipe for this. I went on fewest ingredients with maximum flavor. Lots of tasting was necessary and given the heat from the chillis I felt like my mouth was about to explode after I was done. My taste buds went in to shock, in a good way that is.
